2.1 Тістоділильна машина РМК-60.

Ця машина призначена для ділення пшеничного тіста із сортовго борошна при виробці дрібноштучних виробів масою від 0,05 до 0,275 кг. Для більш раціонального використання тістоділильна машина обладнана двома змінними ділильними головками: двокамерною – для заготовок масою 0,275-0,11 кг і чотирьохкамерною для 0,05-0,11 кг.

Тістоділильна машина (рис. 2) складається із станини приводного електродвигуна, головного вала з двома закріпленими на ньому кулаками і зірочкою для привода ділильної головки.

Кулак необхідний для періодичного переміщення важеля, закріпленого на опорному валу і зірочки, що змінює швидкість обертання ділильної головки. Зірочка використовується для автоматичної підтримки натягу ланцюга привода ділильної головки. Кулак керує рухом нагнітаючого поршня з допомогою важелів, штанги і пружинного демпфера. Останній використовується для стабілізації тиску тіста в робочій камері ділильника. На головному валу знаходиться ще кулак приводу заслінки (на рис. 2 не показаний), який з допомогою важелів керує рухом відсікаючої заслінки. Для легкого зняття тістових заготовок на конвеєр використовується рифлений валик, який обертається. Привод  стрічкового конвеєра здійснюється від валу з допомогою конічної пари шестерень. Подача тіста в ділильник здійснюється через прийомну воронку.

Пристрій ділильної головки і механізм регулювання маси заготовок показано на рис. 3.

Головка складається з чавунного барабану з запресованими у нього двома або чотирма циліндрами – мірними камерами. У циліндрі знаходиться плаваючий поршень, його переміщення вліво заперечується упором, а вправо – роликом, закріпленим на важелі. Останній кріпиться на поворотному валику, який вмонтований в отворах кінцевих стінок барабана. На хвостовику валика, що виходить за стінку барабана, кріпиться важіль з керуючим роликом. При обертанні ділильної головки керуючий ролик прокатується по дузі нерухомої направляючої важеля регулювання маси заготовки і нерухомої направляючої, робоча поверхня якої постійно зближується з центром ділильної головки. При прокатуванні керуючого ролика по нерухомій направляючій повертається валик, і ролик, що натискує на поршень, виштовхує відміряну тістову заготовку із мірної камери. При цьому ділильна головка прокручується по годинниковій стрілці на 180º проти положення, вказаного на рис. 3. Маса заготовок регулюється без зупинки машини з допомогою гвинта, який переміщує нерухому направляючу, а остання через керуючий ролик 7 і валик переміщує ролик 4 і обмежує хід мірного поршня і величину мірної камери.

Працює тістоділильник наступним чином. Тісто подається самопливом у прийомну воронку. З неї затікає в робочу камеру, в цей час поршень і заслінка знаходиться у крайньому лівому положенні. Потім заслінка і поршень рухаються вправо, причому заслінка рухається швидше поршня і відсікає необхідний об’єм тіста у робочій камері. Під дією нагнітаючого поршня тісто стискується до робочого тиску, який можна регулювати. В цей час ділильна головка займає таке положення, при якому мірні кишені з’єднуються з робочою камерою, і тісто з неї переміщується в мірні кишені і рухає в них поршні в крайнє праве положення. Потім ділильна головка повертається і мірні кишені звільнюються. Заготовки із ділильної головки падають на стрічковий конвеєр.

2.2 Тістоділильна машина “Кооператор”.

Ця машина (рис. 4) призначена для ділення пшеничного, житньо-пшеничного і житнього тіста на шматки масою від 50 до 2500 г. Завдяки універсальності цю машину широко застосовують на хлібозаводах, де виготовляють широкий асортимент хлібобулочних виробів.

Основними частинами тістоділильника є прийомна воронка, тістова камера з нагнітаючим поршнем і заслінкою, ділильна головка зі змінними поршнями, встановленими в мірній кишені, приводний механізм з пружинним стабілізатором тиску в тістовій камері, механізм регулювання маси шматків тіста, стрічковий конвеєр, мукопосипник і система смазки.

Привод робочих органів машини здійснюється від колінчастого вала, що обертається від електродвигуна, клинопасового варіатора швидкості, редуктора і ланцюгової передачі. Колінчатий вал через шатун з пружинним стабілізатором тиску, вісь і двохплечий важіль передає рух в горизонтальній плоскості нагнітальному поршню і заслінці, причому заслінка випереджає рух поршня.

До обох кінців колінвала твердо закріплені диски з ексцентрично розміщеними пальцями, які шарнірно з’єднані з шатуном, який передає зворотно-поступальний рух ділильній головці, а коливальний рух – лівому кінцю конвеєра. Безперервний рух стрічковий конвеєр отримує також від колінчастого валу через ланцюгову передачу, яка одночасно приводить в рух масляний насос системи змазки.

До корпусу ділильної головки шарнірно закріплений важіль з роликом для примусового виштовхування поршнів і шпиндель з маховиком для регулювання маси шматків тіста. Ділильна головка має 4 комплекти змінних поршнів. На передньому кінці конвеєра знаходиться натяжний механізм і мукопосипник. Тісто з прийомної воронки при русі нагнітаючого поршня і заслінки вправо заповнює тістову камеру, а потім при русі поршня і заслінки вліво нагнітає його в мірні кишені ділильної головки.

Ділильна головка з заповненими тістом мірними кишенями переміщується вертикально вниз разом з лівим кінцем конвеєра, відсікаючи шматки тіста. Поршні ділильної головки в нижньому положенні під дією важеля з роликом виштовхує роздільні порції тіста на стрічковий конвеєр. Швидкість ділення регулюють в процесі роботи машини з допомогою варіатора.

Всі поверхні, що труться, змазуються мастилом з допомогою централізованої системи змазки. Для легкого обслуговування машини прийомна воронка виконана відкидною.

Борошнопосипник має індивідуальне включення і працює за принципом вібрації нижньої стінки основи.

2.3 Ділильно – округлюючий автомат “Мультимат”.

Машина призначена для ділення і округлення тіста різних сортів пшеничного борошна при виробництві здобних і булочних виробів. Ця високопродуктивна машина використовується в складі потоково-механізованих спеціалізованих ліній. Автомат випускається в 4-х, 5-ти і шестирядному виконанні.

Спосіб нагнітання тіста – поршневий, дозування проводиться обертальною ділильною головкою з мірними кишенями, в яких встановлені плаваючі поршні. Тістові заготовки діляться в заглибленнях безперервно обертального барабана між зовнішньою стрічкою і внутрішнім барабаном, що здійснює рух вздовж своєї осі. Точність ділення цих машин ±1г. Характеристика ділильника з поршневим нагнітачем приведена в табл. 1.
